Colombia's geography — three Andean ranges running north to south — produces an unusually wide harvest window and a corresponding variety of cup profiles. Northern departments like Santander tend toward chocolate and nut; southern Huila and Nariño lean brighter, with stone fruit and citrus. The 'mitaca' fly crop in April–June is a reliable second harvest that keeps fresh Colombian green coffee on the market most of the year.
