Most retail coffee is roasted in batches, packaged, and held in inventory until purchased. Roast-to-order works differently: the order triggers the roast. The coffee is roasted on the next scheduled batch, packaged, and shipped within the roaster’s stated window. By the time it arrives, it is typically only days old.
