Notes on Moka Pot
Moka pot is Italy's stovetop coffee tradition, predating the modern espresso machine and still a kitchen fixture in much of southern Europe. The brewer pushes water through the grounds at roughly 1–2 bar of pressure — a fraction of an espresso machine's 9 bar — producing a concentrated coffee with body but not true crema. Aluminum models heat fast but transfer trace metallic notes; stainless steel pots taste cleaner. The most common mistakes are tamping the grounds (which over-pressurizes the basket) and leaving the pot on heat after the chamber fills (which scorches the brewed coffee).
