Coffee was first cultivated in Ethiopia, where it grows wild in the highland forests of the southwest. The country remains the largest producer of African coffee and the source of the genetic diversity that underpins most of the world's arabica.

Ethiopian coffee is unusual in that the country still grows hundreds of unmapped heirloom varieties, often referred to collectively as 'Ethiopian Heirloom' on bag labels. That genetic diversity is the source of the floral, citrus, and stone-fruit complexity that defines the origin. Smallholder farmers — most working under five hectares — deliver cherries to washing stations that handle processing for entire communities, which is why a single Yirgacheffe lot may represent dozens of farms. Look for region (Yirgacheffe, Sidamo, Guji, Limu) and washing station name on the bag; both predict the cup more reliably than 'Ethiopian' alone.
